VEGAN EDITION: Top 5 favourite Christmas recipes

As the festive season approaches, we’re all looking for delicious vegan recipes that will make our Christmas dinner extra special. Here are the top 5 vegan Christmas recipes that will have everyone coming back for seconds!

1. Vegan Christmas Roast.

This vegan roast is made with tempeh and is seasoned with herbs and spices. It’s a hearty and delicious centrepiece that will satisfy even the biggest appetites.

    Ingredients:

    • 1 large eggplant
    • 1 red bell pepper
    • 1 onion -3 cloves garlic
    • 1 teaspoon dried thyme
    • 1 teaspoon dried oregano
    • 2 tablespoons olive oil
    • 2 tablespoons balsamic vinegar
    • 1/4 cup vegetable broth
    • 1/4 cup gluten-free breadcrumbs
    • 1/4 cup walnuts, finely chopped
    • 1/4 cup fresh parsley, chopped
    • Salt and pepper to taste

    Instructions:

    1. Preheat oven to 375°F/190ºC.
    2. Cut the eggplant lengthwise into 4 slices. Place the slices on a baking sheet lined with parchment paper. Drizzle with 1 tablespoon of olive oil and season with salt and pepper. Roast for 20 minutes.
    3. While the eggplant is roasting, prepare the stuffing. Dice the bell pepper and onion and mince the garlic. Heat the remaining tablespoon of olive oil in a large skillet over medium heat.
    4. Add the bell pepper, onion, garlic, thyme, and oregano to the skillet and season with salt and pepper. Cook, stirring occasionally, until the vegetables are soft and beginning to brown, about 10 minutes.
    5. Add the balsamic vinegar and vegetable broth to the skillet and bring to a simmer. Simmer for 2 minutes.
    6. Add the breadcrumbs, walnuts, and parsley to the skillet and stir to combine. Simmer for 1 minute.
    7. Remove the skillet from the heat and let the stuffing cool slightly.
    8. When the eggplant is done roasting, remove it from the oven and reduce the oven temperature to 350°F/180ºC.
    9. Divide the stuffing between the 4 eggplant slices, pressing gently to adhere. Place the stuffed eggplant slices back on the baking sheet and roast for 20 minutes.

    Ingredients:

    • 2 cups all-purpose flour
    • 1 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 tsp ground cinnamon
    • 1/2 tsp ground ginger
    • 1/4 tsp ground nutmeg
    • 1/4 cup vegan butter
    • 1/2 cup dark brown sugar
    • 1/3 cup molasses
    • 1/4 cup non-dairy milk

    Instructions:

    1. Preheat oven to 350°F/180ºC.
    2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, and nutmeg.
    3. In a large bowl, cream together the vegan butter and brown sugar until light and fluffy.
    4. Add the molasses and non-dairy milk and mix until combined.
    5. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
    6. On a lightly floured surface, roll out the dough to 1/4 inch thickness.

      Ingredients:

      • 2 tablespoons olive oil
      • 1 small onion, chopped
      • 4 cloves garlic, minced
      • 2 cups white mushrooms, sliced
      • 2 cups cremini mushrooms, sliced
      • 2 tablespoons fresh thyme leaves
      • 2 tablespoons fresh sage leaves, chopped
      • 1 teaspoon dried oregano
      • 1 teaspoon dried marjoram

      2. Add the mushrooms, thyme, sage, oregano and marjoram. Cook, stirring occasionally, until the mushrooms are softened and lightly browned, about 8 minutes.
      3. Add the vegetable broth, white wine, vegan butter, and cubed bread. Stir to combine and cook until the liquid is absorbed and the bread is lightly toasted, about 5 minutes.
      4. Add the walnuts and parsley and season with salt and pepper, to taste.
      5. Serve the stuffing warm or at room temperature. Enjoy!
